Canadiana Cheddar Cheese Soup

Canada is world-renowned for its cheddar cheese.

Yield: 4-6 servings
Prep time: 10 minutes
Cook time: 20 minutes


Equipment

measuring cup and spoons

cutting board and knife

grater

medium saucepan

mixing spoon

 

Ingredients

45 mL butter

50 mL onion, finely chopped

50 mL carrot, finely grated

45 m L flour

15 mL chicken bouillon mix

2 mL paprika

2 mL dry mustard

500 mL milk

500 mL water

500 mL cheddar cheese, shredded

toasted croutons

Instructions

  1. Melt butter in saucepan. Sauté onion and carrot until tender.
  2. Blend in flour, bouillon mix, paprika and mustard.
  3. Gradually stir in milk and water.
  4. Cook on medium heat, stirring constantly, until mixture just comes to a boil and thickens.
  5. Remove from heat. Add cheese and stir until melted.
  6. Garnish with toasted croutons to serve.
