Frozen Vanilla Yogurt

Make your own frozen yogurt!

Yield: 6-8 servings
Prep time: 1-2 hours to drain the yogurt; 15 minutes preparation; overnight to chill and about 15 minutes to churn
Cook time: 10 minutes


Equipment

Ingredients

500 mL plain yogurt

10 mL unflavoured gelatin

250 mL sugar

450 mL milk

10 mL vanilla extract

Instructions

  1. Drain the yogurt, releasing about 125 mL of the whey (1–2 hours).
  2. Sprinkle gelatin into 50 mL of the milk. Let stand about 10 minutes, until gelatin swells.
  3. Heat remaining milk with sugar, stirring to dissolve the sugar. Remove from heat.
  4. Add gelatin to hot milk stirring until completely dissolved. Cool to room temperature. Add vanilla and drained yogurt.
  5. Cool the mixture in a refrigerator for several hours or overnight.
  6. Freeze in an ice cream maker or hand churner.
